With longer evenings and cooler temperatures setting in, I usually crave some tasty home-cooked meals. Casseroles are one of my favorite dishes in the fall and winter time, because they’re so easy to make and can be prepared with anything that you have left in your fridge. The recipe above is just one of many, many examples of what you can put in a casserole, you can use different kinds of meats (or no meat at all for that matter) and any vegetables that you like.
The different combination of ingredients has never failed to disappoint me. Plus, the meal practically cooks itself. No “food-sitting” at the stove or long preparation. You cut everything up, put it in a glass dish and just put it in the oven. Done!
