Last summer, we made this “Greek Gyro Salad” (which I heavily adapted from a recipe I found online) a few times because it was quick and easy and didn’t require much cooking , and I never shared it. Which is a crime in itself, because it was so, so good.
Trader Joe’s has these fully-cooked Gyro meat slices that only need to be heated up in a frying pan and they are a great addition to this salad, even though you could make it a meatless meal, of course.
So, if you’re looking for an easy dinner, here’s how you put it together.
Dressing:
- 1/4 cup plain greek yogurt
- 1 clove garlic minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon Worcestershire sauce
- 1 tablespoon dijon mustard
- 1/4 cup olive oil
- 1/4 cup feta crumbled
- salt + pepper to taste
Salad:
- 4 cups romaine lettuce chopped (we also mixed in some kale)
- 1 cup cherry tomatoes (halved)
- green olives (we like the ones stuffed with feta or jalapeños)
- 6 hard boiled eggs (halved)
- warm pita bread
- Gyro meat slices (optional)

November 10, 2019 at 2:58 pmYumm! I shop at TJ’s but didn’t know they have these. I’ll definitely pick some up. I try to eat more salads so ingredients like this make them more enticing.
