10: Recipe | Greek Gyro Salad

Last summer, we made this “Greek Gyro Salad” (which I heavily adapted from a recipe I found online) a few times because it was quick and easy and didn’t require much cooking , and I never shared it. Which is a crime in itself, because it was so, so good.

Trader Joe’s has these fully-cooked Gyro meat slices that only need to be heated up in a frying pan and they are a great addition to this salad, even though you could make it a meatless meal, of course.

So, if you’re looking for an easy dinner, here’s how you put it together.

Dressing:

  • 1/4 cup plain greek yogurt
  • 1 clove garlic minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dijon mustard
  • 1/4 cup olive oil
  • 1/4 cup feta crumbled
  • salt + pepper to taste

Salad:

  • 4 cups romaine lettuce chopped (we also mixed in some kale)
  • 1 cup cherry tomatoes (halved)
  • green olives (we like the ones stuffed with feta or jalapeños)
  • 6 hard boiled eggs (halved)
  • warm pita bread
  • Gyro meat slices (optional)
Mix the dressing in a bowl.
Brown the meat in a frying pan and boil the eggs.
Warm the pita bread in a small pan.
Arrange the ingredients on a plate and drizzle the salad with dressing.

  3. Warm the pita bread in a small pan.

  4. Arrange the ingredients on a plate and drizzle the salad with dressing.

  1. Yumm! I shop at TJ’s but didn’t know they have these. I’ll definitely pick some up. I try to eat more salads so ingredients like this make them more enticing.
