Recipe: Comfort Food

In the winter, I have a real big craving for what I call my “comfort food” – not to be confused with what “comfort food” stands for in the US. Comfort food for me in the winter are soups, stews and anything mashed potato.

So, here’s a simple and delicious go-to meal when you don’t want to spend time in the kitchen for very long. Those ingredients are staples in my pantry, so it’s an easy recipe for when the rest of the fridge is pretty empty, but I don’t want to go shopping quite yet.

Ingredients:

5-6 medium potatoes

6 oz of cut green beans (I use frozen)

1 package of Trader Joe’s pancetta (optional)

salt, pepper

1/4 cup of milk

vegetable stock

 

Peel the potatoes and cook them in vegetable broth until tender. In a separate pot, boil the green beans (until firm to the bite – don’t overcook!)

Mash the potatoes with a potato masher and/or electric mixer (I like mashed potatoes without chunks). Add milk and vegetable broth until you get your desired consistency. Toss in the green beans and pancetta. Add salt and pepper to taste.

And… enjoy!
