8: Recipe | Quick One Pot Gnocchi

If you’re looking for a quick weeknight dinner, look no further! This is a tasty dinner that comes together in under 30 minutes. It’s a one-pot meal – no separate cooking of the gnocchi necessary! – and therefore doesn’t require much cleanup either! It’s a win-win situation.

This is an improvised recipe that can be easily tweaked (e.g. I’ve used leftover kale instead of spinach before) and it has made its way into my recipe book and our regular meal rotation.

Quick One Pot Gnocchi

12 oz gnocchi
1 lb. ground  turkey
1 onion — chopped
1 tsp garlic — minced
8 oz mushrooms – sliced
12 oz baby spinach
3 oz sun-dried tomatoes 
3 cups vegetable broth
1 cup half and half
1 tbsp. soffritto (or other Italian spice blend)
1/2 cup fresh parmesan
red pepper flakes (optional)

Heat the oil over medium heat. Add garlic and onion and saute for 5 minutes.
Add the ground turkey, breaking it up as you cook it and season with sofrito.

Add the quartered mushrooms and sun-dried tomatoes and saute for 5 minutes, then add the spinach and cook until wilted. Stir frequently.

Add the vegetable broth and half & half and bring to a quick boil, then reduce heat and let simmer for a few minutes. Add the gnocchi and simmer for an additional 2-3 minutes. 

Add the Parmesan and season with salt, pepper, and red pepper flakes (optional).

  1. I love Gnocchis but can only find packaged ones here. Would love to buy some from a freshly made pasta store. It’s pure comfort food.

  2. I love gnocchi but haven’t had them in a while… mainly because I eat the whole package in one sitting. Sigh.
    But this looks good. I may have to get myself some.

  3. It’s been a good few years since I made gnocchi or even bought any fresh. The stuff they sell in supermarkets is awful. But this recipe might just get me to add it to the winter line-up.

  4. I LOVE gnocchi. I have made it from scratch, but I find that frozen is a pretty good substitute. I make a one-pan dish with spinach and cherry tomatoes, but this looks like a good way to get protein in too – thanks!

  6. This looks delicious. If I could go back in time to when my husband could eat gnocchi and cream and my daughter would eat turkey, I think we would really enjoy this.
