Kim asked me yesterday if I would share the super-tasty, very easy Chicken Salad recipe with you that I had mentioned in my post. I most certainly would! Here it is:
Ingredients:
2 chicken breasts – cooked and cubed
3 celery sticks – sliced
1 (gala) apple – diced
1 handful of walnuts – crushed
1 handful of craisins
6 tbs of plain, non-fat yogurt
2 tbs of mayonnaise
pepper, salt (to taste)
Mix the ingredients in a bowl and just add some lettuce and a slice of tomato to make a very tasty, easy sandwich with fresh sourdough bread.
The yogurt makes the dressing really fresh and light and the celery, apples, and walnuts give the salad a nice crunch.
Chicken Salad Sandwich has become my go-to meal if I don’t feel like cooking. I am sure it’ll be even more popular around our house in the summer, when we don’t want to turn on the oven at all.

Perfect! This looks really yummy! My dad, for God only knows what reason, has recently decided that I know how to cook (why?? how?? WHAT?!) and so whenever I go home, he expects that I make something new for him to try… This is what he will get for Easter! Ha! :)

This looks SO DELICIOUS. I hate mayonnaise but I bet when it’s mixed with yogurt, you hardly even taste it.
