I am not sure if I have mentioned before, but I am a HUGE zucchini fan. I think it’s my favorite vegetable. For the longest time, I would just slice it up and cook it in a pan just until tender and then sprinkle a little salt and pepper on top of it. That’s all the spices they needed.
But a couple months ago, I found a new recipe for zucchini and it has easily become one of my favorite side dishes: zucchini pancakes!
They are super-easy to make and so delicious! I tweaked the recipe a little bit, but they turned out great!
Ingredients:
4 small to medium sized zucchinis
1 small onion (finely chopped)
1/4 cup of fresh parsley
1 garlic clove (minced)
1/4 cup grated parmesan cheese
6-8 tbsp wheat flour
2-3 tbsp of water
salt and pepper to taste
Grate zucchini into a large bowl (you can grate them as chunky or fine as you like). Add onion, garlic, parsley, cheese and flour. Mix all ingredients well and add the 2-3 tbsp of water to make sure it’s somewhat sticky. Season with pepper and salt.
Heat a large skillet over medium heat and spray with (canola) oil. Form little balls of the zucchini batter and squeeze flat between your palms before dropping it into the pan. Cook a couple of minutes from each side until golden brown. Serve hot along with some grilled chicken, fish or just enjoy by themselves.

Zucchinis fein reiben und mit Eiern, Salz, Pfeffer und Dill wuerzen und in heissem Fett ausbacken! Auf Kuechenkrepp abtropfen lassen!
Wird gerne mit plain greek Joghurt gegessen! YumYumm!
Auf eine Zucchini (presse ich aus nach dem Reiben, weil sonst zu fluessig) kommt ein Ei!
