We Germans, we like our potato side dishes. I don’t know about you, but I basically grew up on potatoes. I love potatoes in pretty much any form and I am trying to find more ways to incorporate them into our meals. Potatoes sometimes get a bad rep, but they’re actually an important part of a healthy diet.
Today I am sharing a recipe for a potato salad on the lighter side with you. It’s not made with mayo, but with a broth-based vinegar dressing. It’s a Bavarian recipe and it adds some pancetta to the mix. If you want it to be vegetarian, you can omit the pancetta, but of course, it gives it some extra flavor.
Give it a try, you just might like it.

I can eat them daily. And if I had to choose between rice, noodles or potatoes – take a guess…
I love this kind of potato salad. We never really do it with mayo and if it’s always mir joghurt than mayo.
