I made these blueberry muffins for J’s birthday instead of a birthday cake (because J loves blueberry muffins > cake) and they turned out really great. Jon is a big fan of the crumble topping, so I was happy to add that and modify my Mom’s recipe for pound cake for the main batter. I used greek yogurt and canola oil instead of butter, to make it a little lighter. These muffins were whipped up in no time (no mixer needed) and only had to bake for like 20 minutes, which meant I was able to bake them even before work that morning.

I think that everyone deserves a birthday treat! For me, I always request macarons from my favorite shop because it’s a GF treat that is delicious. A lot of GF desserts kind of suck as GF flour really changes the texture of baked goods. But luckily macarons are naturally GF since they are made with almond flour.
