20: Recipe: Comfort food

You guys, I threw together this really easy and fast dinner the other night and I think it might become one of my go-to favorites for days when I don’t want to spend a whole lot of time in the kitchen. Don’t get me wrong, I love cooking, but sometimes after a 10+ hour day, I want to come home and just have something tasty in a couple of minutes.

I used two Trader Joe’s spicy Italian chicken sausages (which are easy to keep in the fridge as they’re fully cooked), cut up a couple of zucchinis and used some (previously boiled) potatoes, threw it all in a skillet, added pepper and salt to taste and this whole meal was ready in about 10 minutes.

It’s filling, delicious, definitely on the healthy side and just the perfect dinner-in-a-bowl for the upcoming colder season. (Bonus: it’s also really easy if you’re just cooking for one person.)
