  3. One of the screen savers on our Amazon fire stick is the horseshoe in AZ (not sure this is part of a National park?) but it makes me think of you when I see it as I remember you sharing photos of it on your blog! Would love to see it in person some day.

    I look forward to a time when it works to run in the morning! I am hoping to return to running this year but will probably run during lunches when back at work. But in 1.5-2 years both our boys should be sleeping better and I can run in the morning on weekends. Early morning long runs were always my fave!

    Also? That mushroom, farro, and kale stew sounds wonderful – although I’d replace the kale with spinach as kale is the ONE vegetable my body hates.

    And finally, I am beyond impressed with your knitting skills if you’re even *considering* knitting a piece of clothing. Whoa.

    1. I frequently replace spinach with kale in recipes, so definitely go for it. I also made the soup last weekend, but didn’t do the “vegan” (cashew) version but replaced it with a cup of half and half. It was delicious!

      I’ll let you know if I ever work up the courage to try knitting a piece of clothing.
