ENJOYING | my morning workouts. I am on day #111 of my Peloton Streak and I am enjoying all the different workouts I can choose from each day. It does not get boring.
ADJUSTING | to warmer temperatures outside. The “early morning run” it has to be again – very soon.
TRYING OUT | these new Pro Hair Ties. I fell victim to Instagram advertising (I bought these with my own money), but I am already convinced that this is a really awesome product. You can adjust the circumference (depending on hair thickness) and they have an”easy release clasp” so you are not ripping out hair when you pull them out. Since I go between hair down and ponytail a lot, these might be real life hair savers! LOL
WEARING | my Birkenstocks. Hooray, it’s sandals season.
READING | Sold on a Monday by Kristina McMorris.
EATING | homemade vegetable Thai Red Curry (with quick-cooking brown basmati rice). It’s been on regular rotation on our meal plan recently, because it’s so easy and just so delicious.
DRINKING | mostly coffee, tea +water these days.
WORKING ON | a more regular blogging schedule. Blogging is – and will forever be – my favorite social media platform and I want to spend some more time here. Anything you’d like to read about?
FEELING | relief over the guilty verdict (x3) in the Derek Chauvin trial. It’s not really justice, because this shouldn’t have happened in the first place (and George Floyd – and countless others! – should be alive today), but it sure does feel like a step in the right direction and a warning to every police officer to not abuse their power, because it does come with consequences.
HOPING | that this conviction will lead to more meaningful police reform. Police is supposed to be our “friend and helper”. Police is supposed to serve, not “rule” over citizens.
GIDDY | to watch my plants grow. It’s the little things, people.
LOOKING FORWARD TO | getting my second Pfizer shot next week. Jon got his second vaccine dose this week and I am just so thankful for science and excited that vaccinations are moving at such a good pace in this country now. Everybody 16+ is eligible now, so go get your shots!!

April 21, 2021 at 3:45 pmI definitely miss reading other people’s blogs. I’ve always tried to start one but could never keep up with it. But I enjoyed reading others and getting a glimpse into their lives, reading about their fears, vulnerabilities, etc. I started reading blogs in the early 2000s, and it was like a breath of fresh air. It made me feel less alone because I got a glimpse into someone’s inner life and thoughts. I feel like social media killed blogging, and instagram is certainly not the same. Everything is photoshopped or staged in the hopes of selling you a product or service. It gets exhausting

April 21, 2021 at 6:03 pmI just recently planted some herbs for potential summer cocktails and it’s been “exciting” to watch them this week pop their little green heads up. Though the mint did not sprout, I thought it would be the first one to do anything since it is supposed to take over gardens and such.
I prefer reading blogs to other social media sites, but it’s been a bit quiet lately.

It’s one of those moments where I’ll always remember where I was when we heard the verdict. Phil was able to leave downtown early that day so we were together to watch it live on tv. Phew. Now the real work has to happen and I’m hopeful change is coming…

It’s nice out today but it’s been pretty cold here lately – like highs in the 30s! Burr. I am ready for warm, sunny, spring weather but it’s never a given here in Minnesota!

I get my second shot on Thursday and I’m crossing my fingers it doesn’t affect me TOO much, but even so, I am glad I will be fully vaccinated SOON!

Also, I hope that the 2nd vaccine report is a positive one (I had nothing after #2 other than a slightly sore arm!). And, I wish I could make curry with no coconut milk. It’s one of the only things I do not like. :( Any ideas

May 2, 2021 at 6:15 pmSo glad to hear you had no side effects from vaccine #2. I ended up sleeping a lot the day after and having a slight headache, but that was it. Luckily.
Ah dang, you don’t like coconut milk… I’d say you can easily substitute with half & half, if you eat dairy!
