6: Recipe | Blueberry Crumble Muffins

IMG_0256

I made these blueberry muffins for J’s birthday instead of a birthday cake (because J loves blueberry muffins > cake) and they turned out really great. Jon is a big fan of the crumble topping, so I was happy to add that and modify my Mom’s recipe for pound cake for the main batter. I used greek yogurt and canola oil instead of butter, to make it a little lighter. These muffins were whipped up in no time (no mixer needed) and only had to bake for like 20 minutes, which meant I was able to bake them even before work that morning.

[yumprint-recipe id=’5′]If you decide to try them, I hope you like them as much as we did.

Do you also think that every birthday boy and girl deserves a birthday cake (or muffins)? :)

  1. I feel strongly that all muffins should have crumble on top. Always.

  2. CRUMBLE! Love a crumble. Definitely going to give these a try! Thanks for sharing.

  3. Yum, those look good! I love streusel topping! My friend made some pumpkin bars w/ a streusel topping for our pumpkin carving party and they were soooo good.

I think that everyone deserves a birthday treat! For me, I always request macarons from my favorite shop because it’s a GF treat that is delicious. A lot of GF desserts kind of suck as GF flour really changes the texture of baked goods. But luckily macarons are naturally GF since they are made with almond flour.

  4. Yes yes yes
A birthday without cake is not a real birthday in my book!
    They sound really yummy.
    Belated bday wishes to Jon
