Recipe | Broiled veggies and parsley rice

I don’t know about you, but I am a huge fan of big bowls of veggies over rice. I feel like I am putting something really healthy and nourishing into my body and it’s also delicious. This is why I have to share this easy, super-yummy recipe with you.

We’ve been making this a lot lately, because it’s easy to prepare and quick to cook (even on a busy weeknight). Dinner’s ready within 20 minutes.

  2. Yum, this recipe is right up my alley! I’ve been roasting veggies but haven’t broiled them so I will have to do that next time. And that marinade sounds awesome, too! I’m all about easy meals like this!

  3. Yum! I’ll have to try that marinade. I put balsamic on a lot of things, but need to mix it up a bit more, and the dijon sounds great.

  4. I love broiled veggies, but I have never marinated them! I have all of those ingredients and I can’t wait to try this! I’m not a huge meat eater, so this would be perfect for nights when the hubby is working!

  5. Always afraid of the broiler! I feel like things go from perfect to charcoal in about 10 seconds in there.
