7: Recipe – Apple Crêpe

I have to be honest with you, I am not the greatest fan of American pancakes. I know. It’s a tough thing to hear. You’d think I have lived here long enough to have learned to love them. Indeed,  every now and then, I’ll get a craving for them, but in general, I am not big into the fluffiness and the maple syrup-soaking. Meh.

German pancakes (= thicker French crêpes), however? My favorite.

They’re super-easy to make, you only need three ingredients (four, if you count the fruit that I like to put in mine, but you can also put jam or just sugar and cinnamon on top) and they’re ready in no time.

Ingredients:

2 cups flour

2 eggs

2 cups of milk

apples (peeled and sliced)
(optionally you can also use plums, cherries,
peaches or any other kind of fruit that hits your fancy)

cinnamon and sugar (to sprinkle on top)

Mix the ingredients together. Heat a pan and spray with canola spray. Pour in the batter and then layer with apples slices and push them in a little bit so that they’re really imbedded in the batter. When the batter solidifies, flip on the other side and bake until golden brown.

Sprinkle with sugar and cinnamon.
